Abstract
Recommendations that the public increase its intake of fiber-rich foods has focused attention on the use of whole-grain cereals as well as fruits and vegetables. This paper provides an update on the rationale for including various dietary cereal staples and identifies the components of whole grains that may be responsible for their role in disease prevention.
