Abstract
Report on experimental study which was concerned with predicting the extent of browning in packaged, dehydrated cabbage stored at a constant humidity at 37 C. The information was combined in a mathematical model for predicting extent of browning. An iteration procedure over time intervals of 1/10 of a day was used with the aid of an IBM 360 digital computer. The computer technique allows correction for permeability change with time as inside relative humidity changes. The more complex case for hydrophilic- coated (laminated) film allows, in addition, for the effect of thickness of the hydrophobil portion.
