Description
Recently regulatory agencies, farmers, and meat processors responded to covid-related disruptions by diverting animals to smaller processors, temporarily altering regulatory issues, and -in many cases- euthanizing animals. Although the system was nimble enough to allow for some adaptation in the system, an analysis is needed to determine what worked and what did not. This project will engage stakeholders throughout the Minnesota (and beyond) meat processing supply chain better adapt to future disruptions due to COVID-19 or other unforeseen catastrophic events.
